How about making the traditional güllaç (milk dessert with wafer-thin pastry) more reliable for you and your loved ones, without altering its familiar taste?

Perhaps the first delicacy that comes to mind when Ramadan is mentioned is güllaç... This dessert, which is as light as it is appealing with its pleasant aroma, is a good alternative to avoid straining the digestive system after a full day of hunger. However, despite its lightness, the fact that its recipe contains refined sugar unfortunately prevents güllaç from being an innocent dessert. So, how can you overcome this obstacle? With a honey güllaç recipe, of course!

1. WHAT IS HONEY GÜLLAÇ?

Honey güllaç is a reinterpretation of the classic güllaç recipe, one of the indispensable flavors of Ramadan, made with honey. Güllaç, which already has high nutritional values, turns into a dessert that you can consume with peace of mind with this refined sugar-free recipe!

2. HOW TO MAKE HONEY GÜLLAÇ

Materials:

  • Pot

  • Tray or Glass Baking Dish

  • Ladle

  • Mortar

  • Serving Plate

Ingredients:

  • Güllaç (4 sheets)

  • Milk (1 liter)

  • Balparmak Strained Flower Highland and Plain Honey (5 tablespoons)

  • Walnuts (15 pieces)

  • Pomegranate Seeds (1 tea glass)

3. HOW TO PREPARE HONEY GÜLLAÇ?

  • Pour all the milk into the pot and bring it to a boil. Then let it cool to lukewarm.

  • Add 5 tablespoons of Balparmak Strained Flower Highland and Plain Honey to the lukewarm milk and mix well. At this stage, you can add 2-3 drops of rosewater to the milk if desired.

  • Take one sheet of güllaç and place it in a suitable tray or glass baking dish. Then pour a ladle of honeyed milk over the sheet and repeat the same process for the second sheet.

  • Sprinkle some of the walnuts you crushed in a mortar over the two layers of güllaç you created.

  • Cover the walnuts with another güllaç sheet and moisten this sheet with honeyed milk.

  • Finally, repeat the same process once more and sprinkle crushed walnuts and pomegranate seeds over your güllaç.

  • Let the honey güllaç sit in the refrigerator for an average of 2 hours for the milk to be fully absorbed.

4. HONEY GÜLLAÇ PRESENTATION

  • Take the honey güllaç, which has fully absorbed its milk, out of the refrigerator and cut it into slices of your desired size.

  • You can serve the güllaç on a serving plate by itself or with ice cream.

5. THE KEY TO THE HONEY GÜLLAÇ RECIPE

The key to the Honey Güllaç recipe is the temperature of the milk. If the milk is too hot, the güllaç sheets will become soggy, and if it's too cold, the sheets will not absorb the milk. At this stage, you should ensure the milk is lukewarm.
