We are about to leave another Ramadan month behind. As Eid al-Fitr approaches day by day, holiday plans are being made in homes, and on the other hand, intense preparations are underway for the last iftar gatherings of the year. So, can there be a sweet treat to accompany deep tea conversations after these tables that bring friends together and reunite families? If you say "Of course not!", the honeyed almond paste recipe is just for you! This dessert, whose prestige comes from its royal origins, adds lightness to Ramadan tables with its sugar-free recipe. With Eid approaching, there are many reasons for you to consider this exquisite dessert as a treat for your last iftar gathering of the year or as an Eid offering!

1. MAKING HONEYED ALMOND PASTE

Materials:

  • Deep Bowl

  • Cling Film

  • Knife

Ingredients:

  • Almond Flour (1 cup)

  • Balparmak Citrus Honey (2-3 tablespoons)

2. ALMOND PASTE FIRST ENTERED THE PALACE WITH A HONEYED RECIPE

Almond paste first took its place on the Ottoman palace tables in the 14th century and established its permanent presence in this cuisine with its exquisite taste. In the initial recipe prepared by master confectioners from Edirne, honey was used until the widespread use of sugar in the 16th century. The well-deserved fame of almond paste, which was also appreciated by guests visiting the palace, spread throughout the world as a delicious Turkish dessert with various types from the 17th century onwards.

3. HOW TO MAKE HONEYED ALMOND PASTE?

Honeyed almond paste, with the dominant unique flavor of almond and the special aroma of citrus honey, is enough to tantalize the palate on its own. However, if you want to enrich this recipe even further, you can serve all or half of your almond pastes coated with chocolate. For this, you should dip the sliced almond pastes in melted dark chocolate using the bain-marie method and then freeze them in the refrigerator for another 2-3 minutes.

3.1. Dough Preparation Stage

  • Pour the almond flour into a deep bowl. Add two or three tablespoons of Balparmak Citrus Honey into the flour, as preferred.

  • Knead the flour and honey mixture thoroughly until you obtain a soft dough where all ingredients are uniformly mixed.

  • Once the dough reaches the desired consistency, place it on a countertop and shape it into a cylinder with your hands. Then wrap it in cling film and let it rest in the freezer for 15-20 minutes.

3.2. Presentation Stage

  • After the waiting period, remove the dough from the freezer and slice it for serving.

  • You can store the prepared almond pastes in the refrigerator until serving.

Editor's Tip: For honeyed almond pastes you will prepare for your special guests, you can roll out the dough to a thickness of 2 centimeters with a rolling pin and cut it with different shaped molds to create eye-catching presentations.
