This recipe, sweetened only with honey and dates, contains no added sugar, and also no flour, butter, or labneh. You must try this recipe to offer a lighter and much easier version of the classic cheesecake to your loved ones. 1. FOR MAKING FOREST FRUIT CHEESECAKE...

Servings: 5-6 pieces

Preparation time: 1 hour

Waiting time: 3 hours

Materials:

  • Food processor

  • Mini cheesecake mold

  • Spoon

Ingredients:

For the base:

  • Dates (10-12 pieces) or date paste (5-6 tablespoons)

  • Raw almonds (1 handful)

  • Raw cocoa powder (1 heaping tablespoon)

For the middle layer:

  • Bananas (2 small, frozen)

  • Balparmak Meadow Flower Honey (1 tablespoon)

  • Milk (2 tablespoons)

For the top layer:

  • Forest fruits – black mulberry, blueberry, strawberry (1 cup)

2. HOW TO MAKE FOREST FRUIT CHEESECAKE?

  • Place pitted and peeled dates or date paste in a food processor. Add 3-4 tablespoons of hot water.

  • Then process in the food processor until it becomes a puree. Once pureed, add the raw cocoa powder and almonds. Process again.

  • Place the mixture at the bottom of the mini cheesecake molds you will use. Place the molds in the freezer until you prepare the cheesecake cream.

  • For the cheesecake cream, place bananas, milk, and Balparmak Meadow Flower Honey in a food processor. Mix thoroughly. Stop mixing when it reaches a creamy consistency.

  • Then take out your molds from the freezer. Pour the cream you prepared as the second layer on top of the base you placed in the molds. Repeat the same process for all molds.

  • Be careful to leave a finger's width of space on top of the cream for the final layer. Put your mini molds back in the freezer until you prepare the final layer.

  • For the top layer, place your forest fruits in a food processor and process until they become a puree.

  • Take out your molds from the freezer. Pour the fruit puree you obtained on top of the molds.

  • Finally, put them all in the freezer and let them sit for up to 3 hours.

  • After taking them out of the freezer, you can serve them by sprinkling forest fruits on top.
