Recipe for Hot Honey Drinks
A study conducted under the supervision of Prof. Dr. Ahmet Aydın and Prof. Dr. Erdem Yeşilada from Yeditepe University Faculty of Pharmacy examined the increase in the antioxidant power of black tea and herbal teas when honey was added. According to the research results, the antioxidant value of herbal teas flavored with honey increases up to 60 times*. Additionally, honey increases the antioxidant value of black tea by 4 times.
Commenting on the findings from the research, Prof. Dr. Erdem Yeşilada said, "With the research we conducted, we only measured the interaction between tea and honey in detail. We examined the change in their antioxidant power by adding flower and pine honey to a total of 9 different herbal teas, from lemon balm to sage, from linden to green tea. We observed that the addition of honey increased the antioxidant effect in green tea, white tea, and black tea, which are known to have high antioxidant properties, by 3 to 4 times, while it increased the antioxidant effect of linden tea by 60 times. As a result of our analyses; we saw that the phenolic content and antioxidant effect of every herbal tea sample with added honey increased significantly. Our research was conducted with samples prepared using routine tea preparation methods and showed that the effect of honey is not lost when honey is added to hot tea."
